Devil’s food cake
Ingredients:

• 1/2 cup butter
• 3 (1 ounce) squares unsweetened chocolate
• 2 cups white sugar
• 2 eggs
• 1 cup water
• 2 1/4 cups all-purpose flour
• 1 1/2 teaspoons baking soda
• 1/4 teaspoon salt
• 1/4 cup milk
• 1 teaspoon distilled white vinegar

Procedure:

1. Preheat oven to 350 degrees F (180 degrees C). Lightly grease and flour one 9×13-inch pan or two 9-inch round pans.
2. In a small pan melt the butter or margarine with the unsweetened chocolate. Set aside to cool slightly.
3. Cream together the sugar and the eggs until light in color. Add the chocolate mixture to the eggs and temper mixture by beating well
4. Add 1 cup boiled water (still warm) and blend well.
5. Mix together the flour, baking soda and salt. Add this mixture to the chocolate mixture and blend well.
6. Mix together the vinegar and the milk and stir into the chocolate batter. Pour into prepared pan(s).
7. Bake at 350 degrees for 30 minutes or until a toothpick inserted in the center comes out clean. Cake divides well for filling with mousse, or ganache, or black forest fillings.

Banana Chocolate Chip cake
Ingredients:

• 2 1/2 cups all-purpose flour (625 ml)
• 2 tsp baking soda (10 ml)
• 1/4 tsp salt (1 ml)
• 1 cup canola oil (250 ml)
• 2 cups granulated sugar (500 ml)
• 4 eggs
• 2 cups mashed ripe bananas (about 4 large) (500 ml)
• 1 tsp vanilla (5 ml)
• 1 1/3 cups semisweet chocolate chips (325 ml)

Procedure:
1. Preheat oven to 350 F (180 C)
2. Two 9- by 5-inch (2 L) metal loaf pans, lined with parchment or waxed paper, greased
3. In a bowl, combine flour, baking soda and salt.
4. In a large bowl using an electric mixer, beat oil and sugar. Add the eggs, one at a time, beating well after each addition. Add bananas and vanilla, beating well. Add flour mixture, beating just until smooth.
5. Spread batter in prepared pans. Bake in preheated oven for 60 to 65 minutes or until a tester inserted into center of cakes comes out clean. Let cakes cool in pans on racks for 15 minutes. Remove from pans and let cool completely.

Sweet Potato Pie
Ingredients:

• 1 teaspoon vanilla flavoring
• 1 stick butter
• 1 small can evaporated milk (2/3 cup)
• 1 ½ cup mashed sweet potato
• 3 eggs
• 1 ½ cups sugar
• pastry for 1 crust pie

Procedure:

Cream eggs and sugar. Add sweet potato, vanilla flavoring and melted butter. Add milk and mix well. Put in unbaked pie shell. Bake for 1 hour at 350 degrees Fahrenheit.
