Dinner
Dinner is one of the most important meals for every Filipino family because this is the only time when all family members are gathered on the table from work or school.
Filipino “adobo” (chicken or pork) is easy to prepare after a busy day at work. Estimated cooking time of Adobo and Afritada is 40-50 minutes.
Pork adobo
Ingredients:
• 1 kilo pork, cut into cubes
• 3 gloves garlic, minced
• 1 medium onion (sliced)
• 2 cups of water
• 1/4 cup soy sauce
• 3/4 cup vinegar
• 1 tsp. sugar
• 1 bay leaf
• 1 pinch pepper or peppercorn
Procedure:
Mix all ingredients and cook until meat is tender.

Chicken can also be used as pork substitute or if you like to combine pork and chicken it is also possible. This is also applicable for Afritada.
Chicken Afritada
Ingredients:
• 1 kilo chicken cut into pieces
• 5 potatoes, peeled
• 1 redonion, diced
• 1 head garlic, minced
• 1 red, 1 green bell pepper, sliced into strips
• 2 cups pork or chicken stock (broth)
• 1 cup tomato sauce
• 2 tablespoons of patis
• 3 tablespoon cooking oil
Procedure:
Heat cooking oil in a pan and saute’ garlic and onion. Add chicken until brown. Pour the tomato sauce and stock. Bring to boil and allow to simmer for 20 minutes or until the chicken is almost cooked. Add potatoes and continue to cook for 10 minutes or until the potatoes are cooked. Add the green and red bell peppers; simmer for an additional minute or two. Dash salt and pepper to taste.
