Lunch

To feel good throughout the day we need to eat a healthy lunch. Moreover, the ideal time to take our lunch is 12:30 up to 1:00 in the afternoon. Filipinos love to eat rice paired with hot steaming soup during lunch. One example is Mongo Guisado which is the most common Filipino soup because of its rich vitamin content and affordable ingredients.

Mongo Guisado (Stewed Mung Beans)

Ingredients:
•    1 1/4 cups mongo (mung beans)
•    4 cups water
•    2 tbsp. cooking oil
•    ½  onion, sliced
•    3-4 cloves garlic, chopped
•    ½ cup diced pork
•    ½ cup small prawns, pealed
•    salt and pepper to taste
•    100 grams chicharon

Procedure:
Soak mongo beans in 2 cups of water for 4 hours. Bring the same water to boil and simmer beans until tender.   Heat oil in a casserole, sauté onion and garlic until brown. Add diced pork and sauté until brown. Stir in mung beans and 2 cups fresh water. Bring to boil and simmer until pork is fully cooked. Add the prawns/shrimps, salt and pepper.

Pinakbet is like mongo, nutritious and affordable..
Pinakbet or Pakbet

Ingredients:
•    ¼ kilo pork, cut into small pieces
•    2 ampalaya, sliced
•    2 eggplants, sliced
•    5 pieces okra, cut into half
•    1 head garlic, minced
•    2 onions, diced
•    5 tomatoes, sliced
•    1 tablespoon of ginger,  sliced
•    4 tablespoon bagoong alamang
•    3 tablespoons of oil
•    salt and pepper
•    1 ½ cup of water

Procedure:
In a cooking pan, heat oil and fry  pork until brown, remove the pork from the pan and set aside.  On the same pan, saute garlic, onion, ginger and tomatoes. In a casserole, boil water and add “bagoong”. Add the pork in the casserole and mix in the sautéed garlic, onion, ginger and tomatoes. Bring to a boil and simmer for 10 minutes. Add in all the vegetables and cook until the vegetables are done. Sprinkle salt and pepper to taste.
