Salads
Below is the list of salads which are great to prepare during Christmas and family gatherings. Tell your friends about this site and share the good news with them.
Buko salad
Ingredients:
• meat of 4 young coconuts
• 3 ripe mangoes
• 1 medium-sized melon
• 6 ripe bananas
• 1 c. of all purpose cream
• 1 c. sweetened condensed milk
• 2 tsps. of kalamansi juice
Procedure:
Cut the coconut meat into slivers about half an inch wide and three inches long. Cut the
mangoes on both sides to remove the seed. Scoop out the meat then cut into chunks
about two-by-two inches. Cut the melon into quarters and remove seeds. Scoop out the
meat with a spoon then cut into chunks as with the mangoes. Peel the bananas and cut
into rings about half an inch thick. Place in a glass bowl and toss with the kalamansi
juice. In a large bowl, mix together the cream and the sweetened condensed milk using a
wire whisk. Place all the fruits in a large bowl. Add the coconut strips and toss lightly.
Pour in the cream-milk mixture and stir lightly. Chill for a few hours before serving.

Chicken macaroni salad
Ingredients:
• 1/5 kilo macaroni noodles
• 2 to 3 pieces, medium sized carrots
• 1 big chicken breast
• 500 ml of mayonnaise
• 1 can (836 g) pineapple chunks or tidbits
• 1 big white onion, finely chopped
• 1/2 cup sweet pickle relish
• 3 hardboiled eggs, diced
• 1 cup diced cheddar cheese
• 1/2 cup raisins
• salt and pepper to taste
Procedure:
Cook macaroni noodles according to package cooking instructions. In a pot, boil carrots in water for 15 to 20 minutes or until cooked. Drain carrots and let cool, peal then dice. Boil chicken breast in water with salt. Drain chicken breast, then shred in 1 inch lengths. Drain pineapple chunks or tidbits. Combine all ingredients while adding salt and pepper, to taste. Refrigerate, then serve.

Orange delight
Ingredients:
• 1 6 oz. box orange gelatin
• 2 C. hot water
• 2 C. orange sherbet softened
• 1/2 C. mandarin oranges drained
• 1/2 C. crushed pineapple drained
• 1/2 C. sliced bananas
Procedure:
Dissolve gelatin in hot water. Add remaining ingredients, mixing well. Chill until set in a prepared mold. Serves 6 – 8.
